- Showcase, celebrate and promote local and regional artisan food and drink.
- As a not-for-profit organisation, support and involve local charities and good causes.
- Publicise Beccles and the Waveney Valley area as a food and drink destination.
- Promote the Festival as an event destination of choice for small, independent traders and visitors.
- Ensure the event remains free and safe to attend for visitors.
- Offer a diverse and inclusive range of food and drink stalls, world street food and cookery demonstrations.
- Encourage local food and drink businesses to host Fringe events to encourage return custom and raise their profiles.
- Promote environmentally friendly practices with traders and visitors.
